White Bean Chicken Chili
It's the Super Bowl, what do you want to do? You want to eat something tasty, you want to dip some chips, you want to watch a good game.
Well this chili can handle the first two at least.
Dip it, spoon it, drink it. The method of consumption it up to you.
Prep time: depends, how are your chopping skills?
Cook time: good things take time, why are you rushing this?
Ingredients:
Two chili peppers, seeded and diced.
Two yellow onions, diced.
One green bell pepper.
One red bell pepper.
One bundle of cilantro.
Three small vine ripened tomatoes.
Two cans of cannellini beans.
Two pounds of chicken thighs.
Two limes.
One bulb of garlic, peeled and diced.
Two quarts of chicken stock.
Two packages neufchatel cheese.
Spices: salt, pepper, chili powder, cumin, oregano, paprika, garlic powder.
Prep work:
Dice the veggies and separate into three piles:
Pile one: Onion
Pile two: chili peppers, garlic, bell peppers
Pile three: tomatoes
Cut the chicken thighs into one inch cubes, put it in a gallon ziplock bag with some oil, an equal amount of each seasoning, and the juice from half a lime. Let it sit in the bag for at least half an hour.
Chop the cilantro and set aside.
Cooking instructions:
- In a large stock pot add some oil and sauce the onion.
- In a medium saucepan pan cook the chicken on medium high heat. Halfway through add the juice of another half lime and chop the chicken into small pieces with your spatula.
- When the onion begins to brown add the peppers and garlic. Sprinkle salt over the peppers onions and garlic.
- When the peppers begin to shrink, add the tomatoes.
- Let the veggies simmer for about 20 minutes then add one quart of stock and the chicken. Add more of the seasonings in roughly equal amounts.
- Simmer for a while then add the beans.
- Taste the broth, add salt until it wakes up the flavors.
- Simmer as long as you can, add the neufchatel cheese about 30 minutes before you serve and bring the heat up to medium low.
