Garlic Lemon Green Beans

I needed a side for a Friendsgiving in a few hours, and no one had put green beans on the menu yet, so I decided to try something new.

Prep time: 20 minutes
Cook time: 25 minutes

Ingredients

  • 2 lb fresh green beans
  • 1 small yellow onion
  • 8–10 cloves of garlic
  • 1 lemon
  • Olive oil
  • Salt

Steps

  1. Snap the ends off the green beans and then snap them into pieces about 3/4 inch long.
    1. Place the green bean pieces in a colander and rinse thoroughly.
  2. Dice the onion and garlic separately.
  3. Put olive oil in a pan and bring to a medium heat.
  4. Add the diced onion to the pan.
  5. Sauté the onion until it begins to brown, stirring often to prevent burning.
  6. Add the green bean pieces and garlic.
  7. Add salt and the juice of the lemon.
    1. Juice the lemon over a strainer into the pan to prevent seeds from getting in the dish
  8. Sauté until the green bean pieces are starting to soften but are still crunchy.
    1. The pieces will begin to shrivel and brown at the edges.
  9. Remove from heat and serve.
